Capsule – The plastic or tin foil that covers the top of the wine bottle.

Cassis – A French word for blackcurrant has become a common descriptor for Cabernet Sauvignon.

Chewy – Describes the sensation in wine where the flavour has an almost solid feel in the mouth.

Clarification – The removal of excess solids in the winemaking process.

Clean – When smelling and tasting the wine all you get are the odours and flavours of the wine, no interfering faults or flavours.

Clone – Vines derived from cuttings of other vines.

Cloying – An overpowering sweetness.

Colour – For wine there is red, white and pink. However there is a wide range of shades, for example in whites it ranges from the palest straw to a deep golden hue.

Complete – All aspects of a wine’s sight, smell and taste are present and in full force.

Cooperage – A place where barrels are hand made by coopers.

Corked – A fault in a wine where the cork has allowed too much oxygen into the bottle over time causing spoilage.
